Weekend Fun!

So last week I got some good news, my sister and her husband are coming to this side of the world for a week. My bro-in-law's family is from Delaware and they decided to come out here last minute so Hubby and I are spending the weekend with them. I am soooo excited because I haven't seen my sister in a while and I miss hanging out with her.

Hey you! It was good to hear from you on myspace! I thought i'd leave my pretzel recipe here for you! Hope it is good. My only suggestion is to make just what you think you'll eat because they really don't keep well!

Ingredients: 1 pack dry yeast, 1.5 tsp sugar, 1 cup water (warmed to between 110-115), 3.25 c all purpose flour, 1 tsp salt, cooking spray, 6 c water, 2Tbsp baking soda, 1 tsp cornmeal, 1 tsp water, 1 large egg, 2 tsp kosher salt

Dissolve yeast in warm water in a large bowl, let stand 5 minutes. Add 3 c flour and 1 tsp salt to yeast mixture; stir until soft dough forms, turn dough out, knead until smooth and elastic. add remaining flour 1 Tbsp at a time to prevent hands from sticking. Place dough in large bowl coated with cooking spray turning to coat top. cover and let rise in a warm place (85 degrees) free from drafts for 40 minutes or until doubled in size. Punch dough down; cover and let rest 5 minutes. preheat oven to 425. divide into 12 portions; roll each into threads then form into pretzel shapes.place pretzels on cookie sheet with cooking spray. let rise 10 minutes. bring water to a boil with the baking soda in it. reduce to simmer; lower pretzels into water for 15 seconds, flip, then let simmer 15 seconds on the other side. remove from water and set on wire rack. Place pretzels on a baking sheet sprinkle with cornmeal. combine 1 Tbsp water and egg white and stir. Brush the pretzels with the egg white mixture. sprinkle with kosher salt; bake for 12 minutes or until the pretzels are a deep golden brown.

sometimes i sprinkle them with cinammon sugar too.
